With the topic "The effect of harvest time on the nutritional composition of
broccoli sprouts", the group of students from Duy Tan University wishes to
contribute a small part to solving food problems in Vietnam. South in the context
of international integration.
The 6th Scientific Conference "Food Safety and Food Security", in 2022
organized by the Center for Young Science & Technology Development in
collaboration with the University of Food Industry in Ho Chi Minh City, with
consensus by the Department of Science and Technology of Ho Chi Minh City,
the Southern Department of Science and Technology, the Vingroup Innovation
Fund (VinIF).
More than 70 research works of 154 authors and groups of authors from 32
institutions were sent to the Conference, showing the great interest of scientists,
researchers, lecturers and students to the conference. from schools, institutes,
centers and research agencies nationwide.
Many quality studies show that the desire to contribute to creating a foundation
of food security and food safety for the community when "dirty" food is still a
serious problem, not really solved. decide.
In the final round, there were 4 awards in Food Science. In the award-winning
topics, the study "Effect of harvest time on the nutritional composition of kohlrabi
sprouts" was conducted by a group of four students, Truong Viet Hoai, Dang Thi
Quynh Tram, Nguyen Hoang, and Nguyen Chi. Toan.
These students studied Food Technology under the Faculty of Environment &
Natural Sciences, School of Technology, Duy Tan University under the guidance
of Mr. Nguyen Ngoc Hieu and received much attention from the Council because
usefulness in production. Kale sprouts have high nutritional content and are
favored by many customers.
However, neither the producer nor the user knows exactly at what time of
harvest the nutrient content of vegetables is highest and the loss of healthy
biological compounds is the least. The research results of the topic have helped
to fully answer both these questions, and this is the reason why the topic has
won a high prize at the conference.
Talking about the process of implementing the project, MSc Nguyen Ngoc Hieu
said: "The implementation of this project requires modern equipment and special
chemicals, but everything went smoothly because the leadership The school's
leadership always creates the maximum conditions for teachers and students of
Duy Tan University to study and research.
Besides, the students majoring in Food Technology of the school had good
thinking, grasped and absorbed the problem very quickly; especially, your great
passion for experimental research for life."
Sharing the joy after winning the final second prize, Quynh Tram - a member
expressed: "Coming to this contest, we had the opportunity to try our hand at a
big playground, learn more experiences. Research from teachers from many
different universities Valuable comments from the Jury helped us to complete the
study.
The topics submitted for this year's contest are all good, with new ideas, and are
more likely to be applied in practice. Besides, the presentation of the entries is
also very impressive. Therefore, we feel very happy and honored to win the 2nd
prize overall. In the future, we will develop this research and continue to
challenge ourselves in many other competitions."
