Students of Duy Tan University won the second prize in food safety and food security


With the topic "The effect of harvest time on the nutritional composition of
broccoli sprouts", the group of students from Duy Tan University wishes to
contribute a small part to solving food problems in Vietnam. South in the context

The 6th Scientific Conference "Food Safety and Food Security", in 2022
organized by the Center for Young Science & Technology Development in

In the final round, there were 4 awards in Food Science. In the award-winning
topics, the study "Effect of harvest time on the nutritional composition of kohlrabi
sprouts" was conducted by a group of four students, Truong Viet Hoai, Dang Thi
Quynh Tram, Nguyen Hoang, and Nguyen Chi. Toan.
These students studied Food Technology under the Faculty of Environment &
Natural Sciences, School of Technology, Duy Tan University under the guidance
of Mr. Nguyen Ngoc Hieu and received much attention from the Council because
usefulness in production. Kale sprouts have high nutritional content and are
favored by many customers.
However, neither the producer nor the user knows exactly at what time of
harvest the nutrient content of vegetables is highest and the loss of healthy
biological compounds is the least. The research results of the topic have helped
to fully answer both these questions, and this is the reason why the topic has
won a high prize at the conference.

Talking about the process of implementing the project, MSc Nguyen Ngoc Hieu

Sharing the joy after winning the final second prize, Quynh Tram - a member
